Spinach is considered an cold temperature, hardy annual, as hot summer temperatures can cause this plant to bolt. Which means go into seed, (the end of an annual plant's growth cycle). Can also be eaten in sandwiches, chopped up for garnish or added to egg dishes. Spinach is extremely nutritional, and is high in antioxidants. Is rich in iron, magnesium, calcium, and lots of other vitamins and minerals, making it a must for any kitchen garden!
